Seafood Recipes - Happy Shrimp Recipe

Ingredients:

  • 1/4 cup butter
  • 1 1/2 teaspoons garlic; minced
  • 1 pound medium shrimp; peeled and deveined
  • 1/4 cup green onions; chopped
  • 1/4 cup dry white wine
  • 1/3 cup heavy cream
  • 2 tablespoons fresh basil; chopped
  • 2 roma (plum) tomatoes; chopped
  • cayenne pepper to taste
  • salt and pepper to taste

    Instructions:

    1. Melt the butter in a large skillet over medium-high heat.
    2. Add shrimp, garlic and green onions and cook until shrimp is pink, about 5 minutes.
    3. Place shrimp into a dish and set aside.
    4. In the skillet, add wine, cream, tomatoes, basil and cayenne pepper.
    5. Bring to a simmer, then reduce heat to medium-low and simmer for about 10 minutes. You know it is done when the sauce will coat the back of a spoon.
    6. Add shrimp to heat and salt and pepper to taste. Serves 4.
