Seafood Recipes - Honey Ginger Shrimp and Vegetables Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 3 cloves garlic; minced
  • 1/2 onion; chopped
  • 1 1/2 teaspoons ground ginger
  • 2 teaspoons red pepper flakes
  • 1 red bell pepper; chopped
  • 1/2 zucchini; halved lengthwise and sliced
  • 3 cups fresh mushrooms; coarsely chopped
  • 2 tablespoons cornstarch
  • 1/2 cup honey
  • 1 pound medium shrimp; peeled and deveined
  • salt and pepper to taste

    Instructions:

    1. In a wok or large skillet heat olive oil over high heat until it begins to smoke.
    2. Stir in the next 4 ingredients and cook until onion begins to turn brown.
    3. Add in bell pepper, zucchini and mushrooms. Cook until the zucchini softens, about 4 minutes.
    4. In a small bowl, combine cornstarch and honey, stir until smooth.
    5. Add to vegetables and simmer until thickened, about 2 minutes.
    6. Lastly, add shrimp and cook until they turn pink
    7. Salt and pepper to taste. Serves 4.
