Seafood Recipes - Honey Ginger Shrimp and Vegetables Recipe
Ingredients:
2 tablespoons olive oil
3 cloves garlic; minced
1/2 onion; chopped
1 1/2 teaspoons ground ginger
2 teaspoons red pepper flakes
1 red bell pepper; chopped
1/2 zucchini; halved lengthwise and sliced
3 cups fresh mushrooms; coarsely chopped
2 tablespoons cornstarch
1/2 cup honey
1 pound medium shrimp; peeled and deveined
salt and pepper to taste
Instructions:
- In a wok or large skillet heat olive oil over high heat until it begins to smoke.
- Stir in the next 4 ingredients and cook until onion begins to turn brown.
- Add in bell pepper, zucchini and mushrooms. Cook until the zucchini softens, about 4 minutes.
- In a small bowl, combine cornstarch and honey, stir until smooth.
- Add to vegetables and simmer until thickened, about 2 minutes.
- Lastly, add shrimp and cook until they turn pink
- Salt and pepper to taste. Serves 4.
