Seafood Recipes - Mexican Baked Salmon Recipe

Ingredients:

  • 1/2 cup fresh cilantro; chopped
  • 1/4 cup lemon juice
  • 1 jalapeņo; seeded and chopped
  • 4 cloves garlic; crushed
  • 1 teaspoon ground cumin
  • 1 2-lb salmon fillet
  • 2 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tomatoes; sliced thinly

    Instructions:

    1. Preheat oven to 400°F.
    2. In a small bowl combine the first 5 ingredients and set aside.
    3. Brush salmon with olive oil and season with salt and pepper.
    4. Place on a heavy-duty aluminum foil sheet.
    5. Spread cilantro mixture on salmon, then top with tomatoes. Seal the foil tightly. Place salmon in a baking dish.
    6. Bake until fish flakes easily with a fork, about 20 minutes.
    7. Unwrap carefully and place on a platter with baking juices. Serves 4.
