Ingredients:
1 cabbage head; shredded
1 cup green peppers; julienned
2 carrots; shredded
1 Bermuda onions; minced
1 cup Jicama; julienned
1 cup sugar
To make the dressing:
2 teaspoons sugar
1 teaspoon celery seed
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dry mustard
1 teaspoon cilantro; minced
1 teaspoon fresh parsley
1/4 teaspoon ground basil
3/4 cup vegetable oil
1 cup cider vinegar
Instructions:
In a large bowl, combine with pepper, minced onion, and carrots.
Sprinkle on half of the sugar, toss and sprinkle the other half of the sugar.
In a saucepan, combine all the dressing ingredients. Bring to a boil; remove from heat, but do not cool.
Pour this over the cabbage mixture, blending well.
Chill overnight or for 8 hours.
Toss in jicama just before adding the dressing and serving.
