Ingredients:

  • 1 cabbage head; shredded
  • 1 cup green peppers; julienned
  • 2 carrots; shredded
  • 1 Bermuda onions; minced
  • 1 cup Jicama; julienned
  • 1 cup sugar To make the dressing:
  • 2 teaspoons sugar
  • 1 teaspoon celery seed
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dry mustard
  • 1 teaspoon cilantro; minced
  • 1 teaspoon fresh parsley
  • 1/4 teaspoon ground basil
  • 3/4 cup vegetable oil
  • 1 cup cider vinegar

    Instructions:

  • In a large bowl, combine with pepper, minced onion, and carrots.
  • Sprinkle on half of the sugar, toss and sprinkle the other half of the sugar.
  • In a saucepan, combine all the dressing ingredients. Bring to a boil; remove from heat, but do not cool.
  • Pour this over the cabbage mixture, blending well. Chill overnight or for 8 hours. Toss in jicama just before adding the dressing and serving.
