Slice a thin slice off the bottom of the tomato so they can sit without rolling around. Scoop out the inners of the tomatoes, discard or use for another recipe. Invert the scooped out tomatoes to drain. In a bowl, combine cream cheese and ham. Fill tomato shells with the ham and cheese mixture. Place a slice of olive on top to make the pupil of the eye.
