Friendship Soup Mix

• 1/2 C dry split peas
• 1/3 C beef bouillon granules
• 1/4 C pearl barley
• 1/2 C dry lentils
• 1/4 C dried minced onion
• 2 tsp Italian seasoning
• 1/2 C uncooked long grain rice
• 1/2 C alphabet macaroni or small pasta

Instructions:

1. In a 1-1/2-pint jar, layer the eight ingredients in the order listed. Be careful to have the macaroni on top.
2. Close container securely.

For the Tag:

Friendship Soup Mix

• 1 package Layered Friendship Soup Mix
• 1 lb ground beef; browned and drained
• 3 quarts water
• 28 oz canned diced tomatoes; un-drained

1. Carefully remove macaroni from top of jar and set aside.
2. In a large stock pot, add the water, tomatoes and soup mix to the meat; bring to a boil.
3. Reduce heat. Cover and simmer for 1 hour.
4. Add macaroni and simmer for an additional 15 monutes or until tender.
5. Remove bay leaves before serving.

Yield: 16 servings.
