Raisin Molasses Cookies Recipe

Ingredients

  • 1-1/2 cups raisins
  • 1/2 cup shortening
  • 1-1/4 cups sugar
  • 2 eggs
  • 1/2 cup molasses
  • 2 cups quick-cooking oats
  • 1-3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions:

  1. Place raisins in a bowl and cover with boiling water then let stand for five minutes. Drain and set aside.
  2. Preheat oven to 350 and lightly grease cookie sheets.
  3. Meanwhile, cream shortening and sugar until light and fluffy in a large bowl. Add eggs, one at a time, beating well after each addition. Add molasses and beat well.
  4. In another bowl, combine the oats, flour, baking soda, salt and cinnamon and add gradually to the other bowl mixing well. Add raisins and stir well.
  5. Drop by tablespoonfuls two inches apart on cookie sheets.
  6. Bake for 12-14 minutes or until lightly browned. Let cool on wire racks. Serves: 30.
