Cookie Recipes Index Raisin Molasses Cookies Recipe
Ingredients
- 1-1/2 cups raisins
- 1/2 cup shortening
- 1-1/4 cups sugar
- 2 eggs
- 1/2 cup molasses
- 2 cups quick-cooking oats
- 1-3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
Instructions:
- Place raisins in a bowl and cover with boiling water then let stand for five minutes. Drain and set aside.
- Preheat oven to 350 and lightly grease cookie sheets.
- Meanwhile, cream shortening and sugar until light and fluffy in a large bowl. Add eggs, one at a time, beating well after each addition. Add molasses and beat well.
- In another bowl, combine the oats, flour, baking soda, salt and cinnamon and add gradually to the other bowl mixing well. Add raisins and stir well.
- Drop by tablespoonfuls two inches apart on cookie sheets.
- Bake for 12-14 minutes or until lightly browned. Let cool on wire racks. Serves: 30.
