Breakfast Cookies Recipe

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 10 bacon strips, cooked and crumbled
  • 2 cups cornflakes
  • 1/2 cup raisins

Instructions:

  1. Preheat oven to 350 degrees.
  2. Cream butter and sugar until light and fluffy in a large bowl. Add in egg and beat well.
  3. In another bowl, combine flour and baking soda and add gradually to the other bowl. Add bacon, cornflakes and raisins and stir well.
  4. Drop by rounded tablespoonfuls two inches apart onto un-greased cookie sheets.
  5. Bake for 15-18 minutes or until lightly browned.
  6. Let cool on wire racks after cooling for two minutes on cookie sheets. Store in the refrigerator. Serves: 12.
