Banana Oatmeal Cookies Recipe

Ingredients

  • 1 cup butter-flavored shortening
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 3 medium ripe bananas, mashed
  • 2 cups quick-cooking oats
  • 1 cup (6 ounces) semisweet chocolate chips

Instructions:

  1. Preheat oven to 375 degrees and lightly grease cookie sheets.
  2. Cream shortening and sugar until light and fluffy in a large bowl. Add eggs and vanilla and beat well.
  3. In another bowl, combine flour, baking soda, cinnamon and cloves and add to other bowl and mix well. Add bananas, oats and chocolate chips and stir well.
  4. Drop by rounded teaspoonfuls onto cookie sheets.
  5. Bake for 10-12 minutes. Let cool on wire racks. Serves: 24.
