Apricot Chocolate Chip Cookies Recipe

Ingredients

  • 1/4 cup butter, softened
  • 1/4 cup shortening
  • 1/3 cup sugar
  • 1/3 cup packed brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2/3 cup chopped dried apricots
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup chopped walnuts

Instructions:

  1. Preheat oven to 375 degrees.
  2. Cream the butter, shortening and sugars until light and fluffy in a large bowl. Add egg and vanilla and beat well.
  3. In another bowl, combine the flour, salt and baking soda and add gradually to the other bowl. Add the apricots, chocolate chips and walnuts and stir well.
  4. Drop by tablespoonfuls two inches apart onto un-greased cookie sheets.
  5. Bake for 8-10 minutes or until golden brown. Let cool on wire racks. Serves: 18.
