Cookie Recipes Index Apricot Chocolate Chip Cookies Recipe
Ingredients
- 1/4 cup butter, softened
- 1/4 cup shortening
- 1/3 cup sugar
- 1/3 cup packed brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2/3 cup chopped dried apricots
- 1/2 cup semisweet chocolate chips
- 1/2 cup chopped walnuts
Instructions:
- Preheat oven to 375 degrees.
- Cream the butter, shortening and sugars until light and fluffy in a large bowl. Add egg and vanilla and beat well.
- In another bowl, combine the flour, salt and baking soda and add gradually to the other bowl. Add the apricots, chocolate chips and walnuts and stir well.
- Drop by tablespoonfuls two inches apart onto un-greased cookie sheets.
- Bake for 8-10 minutes or until golden brown. Let cool on wire racks. Serves: 18.
