Mint Swirled Cookies Recipe

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup reduced-fat butter, softened
  • 3/4 cup plus 1 tablespoon sugar, divided
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 10 to 20 drops red food coloring
  • 10 to 20 drops green food coloring

Instructions:

  1. Cream butters and ¾ cup sugar in a large bowl. Add in egg and extracts and beat well.
  2. In another bowl, mix flour, salt and baking powder then add to other bowl gradually.
  3. Split dough into three equal parts. Add red food coloring into one part and stir well. Stir green food coloring into another part. The remaining part of dough will be plain. Cover and refrigerate for at least 1 hour.
  4. Now divide each portion of dough into four equal pieces. Roll each into a twelve inch rope using lightly floured hands. Place a red, a green and a plain rope next to each other. Cut through all three ropes at one inch intervals to form sets of three different colored dough. Repeat.
  5. Preheat oven to 375 degrees.
  6. Roll each set of dough into a ball and place three inches apart on un-greased cookie sheets. Flatten balls to 1/8 inch thick with a glass dipped in remaining sugar.
  7. Bake for 8-10 minutes or until bottoms are lightly browned. Let cool on wire racks. Serves: 48.
