Ingredients
- 1 cup butter, softened
- 2 cups packed brown sugar
- 2 eggs
- 1 cup buttermilk
- 3/4 teaspoon root beer concentrate or extract
- 4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1-1/2 cups chopped pecans
- FROSTING:
- 3-1/2 cups confectioners' sugar
- 3/4 cup butter, softened
- 3 tablespoons water
- 1-1/4 teaspoons root beer concentrate or extract
Instructions:
- Preheat oven to 375 degrees.
- Cream butter and brown sugar in a large bowl. Add the eggs, one at a time, and beat well after adding each egg. Add buttermilk and root beer concentrate and beat well.
- In another bowl, combine the flour, baking soda and salt then add gradually to the other bowl. Add pecans and stir well.
- Drop by tablespoonfuls 3 inches apart onto un-greased cookie sheets. Bake for 10-12 minutes or until lightly browned. Let cool on wire racks.
- Combine frosting ingredients in a small bowl and beat until smooth. Cookies may be frosted when completely cooled. Serves: 36.
