Root Beer Cookies Recipe

Ingredients

  • 1 cup butter, softened
  • 2 cups packed brown sugar
  • 2 eggs
  • 1 cup buttermilk
  • 3/4 teaspoon root beer concentrate or extract
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1-1/2 cups chopped pecans
  • FROSTING:
  • 3-1/2 cups confectioners' sugar
  • 3/4 cup butter, softened
  • 3 tablespoons water
  • 1-1/4 teaspoons root beer concentrate or extract

Instructions:

  1. Preheat oven to 375 degrees.
  2. Cream butter and brown sugar in a large bowl. Add the eggs, one at a time, and beat well after adding each egg. Add buttermilk and root beer concentrate and beat well.
  3. In another bowl, combine the flour, baking soda and salt then add gradually to the other bowl. Add pecans and stir well.
  4. Drop by tablespoonfuls 3 inches apart onto un-greased cookie sheets. Bake for 10-12 minutes or until lightly browned. Let cool on wire racks.
  5. Combine frosting ingredients in a small bowl and beat until smooth. Cookies may be frosted when completely cooled. Serves: 36.
