Cookie Recipes Index Raspberry Pinwheels Recipe
Ingredients
- 1 cup butter, softened
- 2 cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon extract
- 3-3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 jar (12 ounces) seedless raspberry jam
- 1 cup flaked coconut
- 1/2 cup chopped pecans
Instructions:
- Cream butter and sugar in a large bowl. Add eggs and extracts mix well.
- In another bowl, mix flour, baking powder and salt then add to other bowl and mix well. Cover and chill dough for at least two hours.
- Divide the dough in half and roll each half into a 12" x 9" rectangle on a lightly floured surface. Combine jam, coconut and pecans and spread over rectangles. Carefully roll up each rectangle, starting with the long end, into a tight jelly roll. Wrap the rolls in plastic wrap and refrigerate overnight.
- Preheat oven to 375 degrees and grease cookie sheets.
- Remove rolls from the refrigerator and cut into ¼ inch slices. Place the slices on the cookie sheets and bake for 10-12 minutes or until lightly browned. Let cool on wire racks. Serves: 48.
