Raspberry Pinwheels Recipe

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 3-3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 jar (12 ounces) seedless raspberry jam
  • 1 cup flaked coconut
  • 1/2 cup chopped pecans

Instructions:

  1. Cream butter and sugar in a large bowl. Add eggs and extracts mix well.
  2. In another bowl, mix flour, baking powder and salt then add to other bowl and mix well. Cover and chill dough for at least two hours.
  3. Divide the dough in half and roll each half into a 12" x 9" rectangle on a lightly floured surface. Combine jam, coconut and pecans and spread over rectangles. Carefully roll up each rectangle, starting with the long end, into a tight jelly roll. Wrap the rolls in plastic wrap and refrigerate overnight.
  4. Preheat oven to 375 degrees and grease cookie sheets.
  5. Remove rolls from the refrigerator and cut into ¼ inch slices. Place the slices on the cookie sheets and bake for 10-12 minutes or until lightly browned. Let cool on wire racks. Serves: 48.
