Oatmeal Raisin Cookies Recipe

Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed light brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups old-fashioned oats
  • 1 cup raisins

Instructions:

  1. Preheat oven to 350 degrees.
  2. Cream shortening and sugars in a large bowl. Add in eggs, one at a time, and beat well after each egg is added. Add in vanilla and beat well.
  3. In another bowl, combine the flour, baking soda, salt and cinnamon. Add to other bowl and beat until combined. Add in the oats and raisins, stir well.
  4. Shape dough into one inch balls. Place two inches apart on un-greased cookie sheets. Flatten with the greased bottom of a glass.
  5. Bake for 10-11 minutes or until golden brown. Do not over bake. Let cool on wire racks. Serves: 21.
