Mouse Cookies Recipe

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup butter or margarine, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • Peanut halves
  • Black shoestring licorice, cut into 2-1/2-inch pieces

Instructions:

  1. Cream peanut butter, sugars and butter in a large bowl. Add in vanilla and egg and beat well.
  2. In another bowl, mix flour and baking soda and gradually add to other bowl. Cover and chill dough for four hour or overnight.
  3. Preheat oven to 350 degrees.
  4. Roll into one inch balls. Pinch one end to form a teardrop shape.
  5. Place two inches apart on un-greased cookie sheets and press to flatten.
  6. Place two peanuts on each cookie near the pointed end to make ears. At the opposite end of the cookie make a ½ inch deep hole for the tail by using a toothpick.
  7. Bake for 8-10 minutes or until golden brown.
  8. Insert licorice tails while cookies are still warm. Let cool on wire racks. Serves: 24.
