Mint Thins Recipe

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 3 tablespoons milk
  • 1 cup fresh mint, finely chopped
  • 1-2/3 cups semisweet chocolate chips
  • 1 tablespoon shortening

Instructions:

  1. Cream sugar and butter in a large bowl until light and fluffy. Add in egg yolk and vanilla and beat well.
  2. In another bowl, mix the flour, baking powder and salt then add to other bowl with milk by alternating the two. Add in the mint and stir well.
  3. Make two 8 inch rolls with the dough and wrap both in plastic wrap. Chill in the refrigerator for two hours or until set.
  4. Preheat oven to 350 degrees and grease cookie sheets.
  5. Remove dough from the refrigerator and unwrap and cut into ¼ inch pieces. Spread the pieces one inch apart on the cookie sheets
  6. . Bake for 8-12 minutes or until edges are golden brown. Let cool on wire racks.
  7. Melt chocolate chips and shortening and stir until smooth.
  8. Dip half of the cookie in the melted chocolate and allow excess to drip off. Lay the dipped cookies on wax paper and let them set. Serves: 54.
