Cookie Recipes Index Mint Thins Recipe
Ingredients
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1 egg yolk
- 1/2 teaspoon vanilla extract
- 1-1/2 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1/8 teaspoon salt
- 3 tablespoons milk
- 1 cup fresh mint, finely chopped
- 1-2/3 cups semisweet chocolate chips
- 1 tablespoon shortening
Instructions:
- Cream sugar and butter in a large bowl until light and fluffy. Add in egg yolk and vanilla and beat well.
- In another bowl, mix the flour, baking powder and salt then add to other bowl with milk by alternating the two. Add in the mint and stir well.
- Make two 8 inch rolls with the dough and wrap both in plastic wrap. Chill in the refrigerator for two hours or until set.
- Preheat oven to 350 degrees and grease cookie sheets.
- Remove dough from the refrigerator and unwrap and cut into ¼ inch pieces. Spread the pieces one inch apart on the cookie sheets
- . Bake for 8-12 minutes or until edges are golden brown. Let cool on wire racks.
- Melt chocolate chips and shortening and stir until smooth.
- Dip half of the cookie in the melted chocolate and allow excess to drip off. Lay the dipped cookies on wax paper and let them set. Serves: 54.
