Cookie Recipes Index Chocolate Peppermint Pinwheels Recipe
Ingredients
- 1 cup shortening
- 1-1/2 cups sugar
- 2 eggs
- 2 tablespoons milk
- 2 teaspoons peppermint extract
- 2-1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 2 squares (1 ounce each) unsweetened chocolate, melted
Instructions:
- Cream sugar and shortening in a large bowl then add milk, eggs and peppermint extract and mix well.
- In another bowl, mix the flour, salt and baking powder and add gradually to the other bowl.
- Split the dough in half and add chocolate to one half and mix well.
- Roll each half of dough, between waxed paper, into a 16" x 7" rectangle, about 1/4-inch thick.
- Remove wax paper and spread the plain dough over the chocolate dough and roll up into a long roll. Place in plastic wrap and refrigerate for about two hours or until solid.
- Remove from refrigerator and unwrap the dough.
- Preheat oven to 375 degrees and lightly grease cookie sheets.
- Cut the dough into ¼ inch pieces and place two inches apart on greased cookie sheets.
- Bake for 8-10 minutes or until lightly browned. Place on wire racks to cool. Serves: 48.
