Chocolate Peppermint Pinwheels Recipe

Ingredients

  • 1 cup shortening
  • 1-1/2 cups sugar
  • 2 eggs
  • 2 tablespoons milk
  • 2 teaspoons peppermint extract
  • 2-1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 squares (1 ounce each) unsweetened chocolate, melted

Instructions:

  1. Cream sugar and shortening in a large bowl then add milk, eggs and peppermint extract and mix well.
  2. In another bowl, mix the flour, salt and baking powder and add gradually to the other bowl.
  3. Split the dough in half and add chocolate to one half and mix well.
  4. Roll each half of dough, between waxed paper, into a 16" x 7" rectangle, about 1/4-inch thick.
  5. Remove wax paper and spread the plain dough over the chocolate dough and roll up into a long roll. Place in plastic wrap and refrigerate for about two hours or until solid.
  6. Remove from refrigerator and unwrap the dough.
  7. Preheat oven to 375 degrees and lightly grease cookie sheets.
  8. Cut the dough into ¼ inch pieces and place two inches apart on greased cookie sheets.
  9. Bake for 8-10 minutes or until lightly browned. Place on wire racks to cool. Serves: 48.
