Bear Claw Cookies Recipe

Ingredients

  • 1 cup butter, softened
  • 1-1/2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup baking cocoa
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2-1/2 cups sweetened puffed wheat cereal
  • 3 tablespoons semisweet chocolate chips, melted
  • 2 tablespoons slivered almonds

Instructions:

  1. Preheat oven to 350 degrees.
  2. Cream butter and sugar in a large bowl and then add two eggs one at a time and beat well after adding each one.
  3. Add in vanilla and beat thoroughly. In another bowl, mix the flour, cocoa, baking soda and salt and then add gradually creamed mixture.
  4. Combine in cereal and stir. Cover bowl and chill in the refrigerator for about one hour or until the dough is easy to handle.
  5. Roll the dough into one inch balls and drop two inches apart on cookie sheets. Then flatten the balls with a glass dipped in sugar.
  6. Bake for 9-11 minutes or until edges are firm. Let cool on wire racks.
  7. Put melted chocolate in a plastic bag and cut a small hole in the corner of the bag. Spread three drops of chocolate on each cookie and place an almond on the drop to make claws. Serves: 36.
