Ingredients

  • 3/4 cup butter or margarine, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup dark molasses
  • 1 egg, beaten
  • 2-1/4 cups all-purpose flour
  • 1-1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 to 3 teaspoons ground cinnamon
  • 2 to 3 teaspoons ground ginger

Instructions:

  1. Preheat oven to 375 degrees.
  2. Cream the butter, sugars, egg and molasses in a bowl, then add flour, salt, cinnamon, baking soda and ginger and mix well.
  3. Cover bowl and chill in the refrigerator for one hour.
  4. On a lightly floured surface, roll dough to about 1/8 inch thick and cut into shapes.
  5. Bake for 5-6 minutes or until set on a non-greased cookie sheet. Place cookies on wire rack to cool. Serves: 6 dozen.
