Confetti Seafood Chowder

Ingredients:

1 1/2 tablespoons unsalted butter

1 small yellow onion; finely chopped

3 celery ribs; finely chopped

1 large red bell pepper; seeded and finely chopped

2 medium russet potatoes; peeled and diced

2 cups chicken broth

1 bay leaf

1/8 teaspoon paprika

1 teaspoon thyme; dried

1/4 teaspoon ground black pepper

2 teaspoons salt; or to taste

2 cups whole milk

1 cup half-and-half

2 cups frozen corn kernels; thawed

1 lb seafood; white fish, scallops, crab, etc

Instructions:

In a skillet, saute butter with onion, celery and pepper.
Place potatoes in the bottom of the crock pot. Add broth and spices, including the sauted mixture in crockpot. Keep potatoes at the bottom of the crock pot.
Cover and cook on low for 6 hours, until potatoes are tender.
Add milk, half and half, corn and fish.
Cook for one hour, until fish is cook through.

Serves 6.
