Crock Pot Recipes

Cheese Soup With Beer

Ingredients:

  • 1/4 cup celery; finely chopped
  • 1/4 cup carrot; finely chopped
  • 1/4 cup green pepper; finely chopped
  • 1/4 cup onion
  • 3 14-oz cans chicken broth
  • 2 tablespoons butter
  • salt and pepper to taste
  • 1/3 cup all-purpose flour
  • 3 cups 12 oz shredded sharp Cheddar cheese
  • 1 can 12 oz light beer at room temperature

    Instructions:

    1. Combine the first seven ingredients in the crock pot.
    2. Cover and cook on low for 4-5 hours.
    3. Pull out vegetables, leaving the broth in the crock pot.
    4. Puree vegetables and return to crock pot.
    5. Add cheese, blending in a small amount at a time. Pour in beer.
    6. Cook 1/2 hour. Serve when heated though and cheese is melted.


    Serves 6 - 8.
