Crock Pot RecipesBaked Potato Soup
Ingredients:
2 potatoes; peeled, diced and boiled until almost tender
3 tablespoon butter
2 cup white onion; chopped
2 tablespoon all-purpose flour
4 cup chicken stock
2 cup water
1 1/2 cup instant mashed potato flakes
1 salt and pepper to taste
1/2 teaspoon basil
1/8 teaspoon thyme
1 cup half-n-half
1/2 cup cheddar cheese; shredded
1/2 lb. bacon; cooked and cubed
2 green onions; chopped
Instructions:
- In a skillet, saute onions in the butter. Mix together flour and 1 cup of the water. Over medium heat add the flour and water mixture to the butter and white onions. Mix well, should get thicker.
- Combine drained potatoes, chicken stock, 1 cup water and onion mixture in the crock pot.Add in bacon, half and half, pepper, basil, salt and potato flakes.
- Cover and cook on low for 6-8 hours.
- 15 minutes before serving add the bell pepper, coconut milk and mushrooms. Heat through.
- Serve garnished with cheddar cheese and green onions.
