Ingredients:
8 boneless, skinless chicken thighs; wash chicken and pat dry
1 cup chunky salsa
1/3 cup peanut butter
2 tablespoons lemon juice
1 tablespoon soy sauce
2 teaspoons finely minced ginger root
1/2 cup chopped peanuts
Instructions:
- In a crockpot, mix together all ingredients except chicken.
- Add chicken and coat with the sauce.
- Cover and cook on low for 8 to 9 hours.
- 15 minutes before serving, sprinkle with chopped peanuts and serve with hot cooked rice.
Yield: 4 - 6 servings.
