Crock Pot Crockpot Enchiladas Recipe

Ingredients:

1 lb. ground beef

1 onion; chopped

1 green pepper; chopped

1 can black beans; drained and rinsed

1 can Rotel

1/3 cup water

1 tsp. chili powder

1/2 tsp. ground cumin

1/2 tsp. salt

1/4 tsp. pepper

2 cups shredded cheddar cheese

4 flour tortillas

Instructions:

In a lareg skillet brown together beef, onion, and pepper.
Stir in the next 7 ingredients.
Bring to a boil, then reduce heat and simmer for 10 minutes.
Layer beef mixture, one tortilla, and some cheese in the crockpot. Repeat layers 3 more times.
Cover and cook on low for 5-7 hours or high for 3 hours.
Cut into wedges and serve with chips, salsa, and sour cream.
