Ingredients:
2 lbs frozen spinach; thawed and drained
1/4 cup onion; grated
1 (8-oz) pkg. light cream cheese; softened
1/2 cup mayonnaise
1/2 cup Cheddar cheese; shredded
2 eggs; beaten
1/4 tsp white or black pepper
Dash nutmeg
Instructions:
- Grease crock pot with butter or non-stick cooking spray.
- In a large bowl, mix spinach with onion. In another bowl, beat in the remaining ingredients to blend and then stir into spinach mixture.
- Spoon into crock pot.
- Cover and cook on high for 2-3 hours
