Applebees Spinach Pizza Recipe

Ingredients:
1/4 cups rice milk
4 Tbls. all-purpose flour
1/3 cup nutritional yeast
10 oz. pkg. frozen spinach - thawed, squeezed and patted dry
1 med. onion - chopped
4 cloves garlic; minced
1 Tbls. olive oil
5 med. plum tomatoes; cored and diced
8 oz. fresh mushrooms; diced
1 tsp. basil
1 tsp. parsley
1 tsp. cayenne pepper
3 pita bread
Instructions:
Preheat oven to 425 degrees F.
In a large saucepan, heat milk, but do not boil.
When milk is hot, stir in flour.
Continue stirring until sauce begins to thicken, reduce heat.
Add yeast and spinach.
Continue to stir constantly until thick and gooey, about 5 minutes.
In a skillet, sauté onion and garlic in oil.
Add tomatoes, mushrooms, and spices.
Sauté until heated; drain liquid.
Split pitas in half to make 2 round, flat pieces.
To build your pizzas, place each piece of bread on a cookie sheet.
Spread spinach sauce over each and top with tomato mixture.
Bake in a 425 degree oven for 5-7 minutes.
Serves 6.
