Campfire Cob Corn and Taters Recipe

Ingredients:

  • 6 large baking potatoes
  • 6 ears corn, shucked
  • 1 Tbsp fresh, pressed garlic
  • Butter
  • Salt to taste
  • 12 green onions; chopped
  • Parsley

Instructions:

  1. Cut aluminum foil into large size peieces that will easily wrap potatoes and corn.
  2. Use a fork to pierce the potatoes.
  3. Coat the potatoes and corn with a mixture of garlic, butter and salt.
  4. Wrap each potato and corn in foil and add one green onion and a sprinkling of parsley before sealing the foil.
  5. Place potatoes in a hot bed of ashes from your campfire or on a well-heated grill rack and close the cover of the grill to steam-cook the potato for 20 minutes.
  6. Turn and add corn to the campfire.
  7. Cook for approximately 30 minutes, turning once.

Makes 6 servings.
