Chicken Mexicana Kabobs Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 2 tablespoons chopped fresh cilantro
  • 1 lime, juiced
  • 2 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 1 small zucchini, cut into 1/2-inch slices
  • 1 onion, cut into wedges and separated
  • 1 red bell pepper, cut into 1 inch pieces
  • 10 cherry tomatoes
  • wooden skewers soaked in water for 30 minutes
  • salt and ground black pepper to taste

Instructions:

  1. Heat grill to high heat.
  2. Whisk together marinate ingredients: olive oil, cumin, chopped cilantro, and lime juice. add chicken, salt and pepper. Marinate for 2 hours up to overnight.
  3. Alternately, skewer chicken, zucchini, onion, red bell pepper, and tomatoes onto skewers.
  4. Oil the grill.
  5. Cook for 10 minutes, use quarter turns every minute and baste. Serve hot when chicken is cook through.
