Barbecue Recipes Grilled Marinated Vegetables Recipe
Ingredients:
1 small eggplant, cut into 3/4 inch thick slices
2 small red bell peppers, seeded and cut into wide strips
3 zucchinis, sliced
6 fresh mushrooms, stems removed
1/4 cup olive oil
1/4 cup lemon juice
1/4 cup fresh basil, coarsely chopped
2 cloves garlic, peeled and minced
p>Instructions:
- In a bowl, mix olive oil, lemon juice, basil and garlic. Whisk well.
- In a large bowl, combine eggplant, red bell peppers, zucchinis and fresh mushrooms. Pour the marinade over the vegetables. Place in refrigerator and let marinade for at least an hour.
- Preheat grill on high.
- Cook vegetables directly on grill for 4-6 minutes, turning and marinading frequently.
