Appetizer Recipes Carrot Cheese Ball Recipe
Ingredients:
- 1-1/2 c. shredded carrots
- 1 8-oz. pkg. Neufchatel cheese; softened
- 2 c. 8-oz. shredded low-fat cheddar cheese
- 2 lg. cloves garlic; minced
- 1 tsp. Worcestershire sauce
- 1/2 tsp. Tabasco sauce
- 3 to 4 tbsp. fresh parsley; chopped
Instructions:
- To prepare grated carrots, press them between two paper towels to get rid of extra moisture.
- In a large bowl, combine the first 5 ingredients. Mix well.
- Chill cheese mixture in refrigerator about 30 minutes to harden.
- Shape cheese mixture into ball.
- Roll in fresh parsley.
- Chill another 15 minutes before serving.
