  • 1 cup mashed potatoes
  • 1 egg
  • 4 rounded Tbsp. flour
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 cup milk
  • shortening for frying

    Instructions:

  • Melt shortening in a frying pan to 1/4-inch deep.
  • Mix together all ingredients in a large bowl.
  • Create potato cakes and place in hot shortening.
  • Fry until browned on both sides.
