Amish Red Beat Eggs Recipe

  • 2 cups of sugar
  • 3 cups of vinegar
  • 1 can sliced beats, with juice
  • 2 tsp. salt
  • 18-24 hard boiled eggs; shelled

    Instructions:

  • In a large sauce pan combine the first 4 ingredients and bring to a boil.
  • Lower heat to a simmer, add eggs. Stir until eggs are well on their way to being a beautiful red/pink color. Turn off and let cool.
  • Place eggs in a tightly sealed container and chill overnight.
  • Serve with salad or as a side dish. They look wonderful whole or sliced in half when serving.
